Come here Pork Chop!!

Since my mom and I are both addicted to the Food Network.. we always call the other when we try out one of the chefs new recipes on their show. So my mom has been buggin me on how great this recipe was for Pork chops! She went on and on how easy it was to make and “fresh” (as Giada from “Everyday Italian”) would say.. lol… So she made a copy of the recipe for me and last night I FINALLY decided to give it a shot :) It was my first time cooking with Pork chops.. so I decided instead of using the meat w/ bones.. I would test the waters with bonless pork chops :) I’ll admit the first 2 chops came out a tad bit on the burt side because I cooked them over too high of heat lol. but by the 2nd batch, I like to think I did it perfectly :) Next time I will give the cops w/ bones in them a try! I now think Pork is my favorite meat!! Its full of lean protein and very juicy! I made my usual zucchini on the stove w/ olive oil, onions and minced garlic :) Tryin to be a tad bit health consious now days lol… Over all it was a great success! and a recipe I will now keep ;) thanks mom! hehe

Since I love it so much, I thought I’d post the recipe to pass along! Its suppperrrr easy, and doesnt require many ingrediants or prep time! I challenge you to make this dish! Post your pics as well!!!

Ingredients

  • 2 large eggs
  • 1 cup dried Italian-style bread crumbs
  • 3/4 cups freshly grated Parmesan
  • 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
  • Salt and freshly ground black pepper
  • 6 tablespoons olive oil
  • Lemon wedges, for serving

Directions

Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.

Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.

    I don't have much luck with pork chops. I stick with steak….i don't screw it up as often. Hey gisele, I assume if you like chops you like steak, I'm cooking a killer steak tips dish tonight…are you jealous? lol
