Although a very simple and classic recipe to make, this was one of my favorite meals my mom used to cook for me growing up! When I moved away from home back in the day, I just had to get the recipe from my mom. And surprisingly it is a simple meal to prepare! My mom used to make an amazing fettuccine alfredo side dish with this meal.. but when cooking at home I try and stick to more “healthy” choices.. so my side dish last night was green peas and a side salad
This dish is yummy with any veggie of your choice and of course fettuccine alfredo, garlic toast and any other pasta is a for sure winner..
The recipe for ‘Tomato Chicken’ is as follows:
- 1 can tomato Sauce
- 1 can diced tomatoes Italian Style
- about 2 cups of Italian Style bread crumbs
- 1 medium size Red bell pepper
- 1 medium size Green bell pepper
- half of a medium size onion
- 2-3 cloves of chopped or minced garlic (depending on how much you love garlic, mince for a more mild flavor)
- 2 tablespoons olive oil
- 3 boneless skinless chicken breasts (these will be cut in half giving you 6 servings)
- 1 tablespoon Italian seasoning
- dash of salt and pepper
Start by taking 3 boneless skinless chicken breasts and cut them in half vertically, giving you a thinner cut of breast.. Place the chicken in a ziplock bag and pound chicken until about half of an inch thick or a bit less..
Then take your chicken out of bag and place them on a plate. Take your salt and pepper and lightly sprinkle to both sides of chicken. Let sit for a few minutes while you assemble your veggies for the sauce ![]()
Chop 1 red bell pepper, 1/2 medium onion, garlic and 1 green bell pepper. Chop to your liking.. bigger pieces for veggie lovers.. smaller for non
Place them in a separate bowl & sprinkle a little olive oil and dash of salt&pepper..
Place 2 tablespoons olive oil in a med/large cooking pan.. let oil heat for a few minutes over medium heat..
Take about 2 cups of dried Italian style bread crumbs and place on a shallow plate or pan.. Start placing chicken one at a time in bread crumbs, lightly coating each side.. place breaded chicken in hot pan with olive oil.. flip chicken in about 4-5 minutes or until golden brown on both sides.
Once all 6 pieces are cooked to golden brown perfection.. place them on a plate with a paper towel on bottom and cover with foil to keep warm while you make your tomato sauce.. (you could multi task and make sauce along with making chicken in a separate pan, however I like the pan drippings and crust formed at bottom of pan when cooking the chicken.. makes for yummy flavor!)
in the same pan you cooked the chicken.. add the bowl of chopped veggies, 1 can tomato sauce, 1 can diced tomatoes, 1 tablespoon Italian seasoning, dash of salt&pepper, let simmer on medium heat for about 15-20 minutes or until veggies are tender.
while sauce was cooking.. I assembled a salad with : 1 head of lettuce, 2 cups of baby spinach, 1 tomato (from my moms garden!!), blue cheese crumbles and fresh avocado
Dressing of your choice but I chose Italian ![]()
Once sauce is ready.. It’s time to eat!!!!!
cover chicken in sauce.. and you are now enjoying my favorite meal to make at home.. Tomato chicken!!! Enjoy!! (sorry no pics of me this time.. food was too yummy and i was ready to eat LOL)
