I have been working oh so hard on my New Years resolutions.. (since yesterday..) LOL.. but all BS aside.. I started yesterday off with a lovely 4 mile “fast pace” walk in the park, followed by a trip to the grocery store to stock up on some healthy food choices for the next few days.. On last night’s menu was one of my favs, FiSh TaCos!!! Although I have indulged on this dish in numerous restaurants.. this was my first attempt to make them myself! I must say.. I did a flawless job.. thanks to Bobby Flay’s recipe of course..

Ingredients
Tacos:

* 1 pound white flaky fish, such as mahi mahi or tilapia (i used tilapia)
* 1/4 cup canola oil
* 1 lime, juiced
* 1 tablespoons ancho chili powder
* 1 jalapeno, coarsely chopped
* 1/4 cup chopped fresh cilantro leaves
* 8 flour tortillas

Creamy Avocado sauce (Gisele’s secret sauce):

* 1 ripe avocado
* 1 lime (juice from one lime)
* 1/8 tsp salt and pepper
* 2 cloves of minced garlic
* 1 cup of fat free sour cream (add more if needed)
* 1/4 cup chopped cilantro

combine all of above ingredients in a small bowl mix with a whisk or fork until smooth with small chunky goodness spread this onto flour tortilla before fish and cabbage!

Cabbage Garnish

* 1/2 of a bag of shredded cabbage mix (Cole slaw mix in salad isle)
* 1/4 of a cup of white vinegar
* 2 tbsp of olive oil
* pinch of salt and pepper

Preheat grill to medium-high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes.

Remove the fish from the marinade place onto a hot grill, flesh side down. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork.

Place the tortillas on the grill and grill for 20 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes. I prepared corn with peppers and black beans for my side dish! The corn played very nice with the fish and the beans helped keep my belly full for the rest of the night add thinly sliced red onion to top of taco at the end for that extra zesty bite and enjoy!!

Gosh.. where to even begin.. I suppose the beginning is best :/

This past  Christmas eve I loss a very close friend of mine in a car accident. My week has been rather hectic to say the least. I have found comfort in spending many nights with her family just simply reminiscing on all of the numerous memories I have shared with her and her family. This is my first “real loss” .. and man do I now uunderstand every SINGLE cliche there is about “living life to the fullest”, “cherishing those in your life” and just truly LIVING and being happy.  Her and I were inseparable ever since we met in the 7th grade. We cried over boys together, we had petty girl fights with each other and we laughed together… we laughed soo damn much. Yall know how silly I can be Well her and I took it to all new levels.. we would always bring out that hyper goofy mentality in each other and would be talking a million miles a minute mixed with giddy laughter that only her and I could understand. We even had a saying that “you don’t even have to finish the story or tell me the rest, because I already know EXACTLY what you mean” and although this is a typical response, her and I knew that the other REALLY did know what the other was thinking or going with their story

She was a sister to me… she will always be apart of me… and I miss her every second…

Every little thing reminds me of her. I will be laughing and literally cracking up at some of my favorite memories of her and I.. and I will also sob at the simple urge of wanting to call her

For those who have lost someone, I know yall can relate… It is this feeling that you always hear about and always have human compassion for those who have lost.. but damn until it happens to you personally.. there is a level of sorrow that you can never prepare for or uunderstand.

That all being said.. I wish everyone pure and utter happiness… LOVE those close to you. Show and tell them every day. Be careful of the grudges you hold. Live life to the fullest and the way YOU wish to do so.. don’t txt and drive, drink and drive, wear a seat belt, don’t speed (unless in a Corvette hehehe) and be kind to everyone.. Life is too short and at times too long to not do any of this..
